Zucchini And Bacon Fritters Recipe 

Great idea to make ahead of time and have in the fridge ready for a quick snack, a breakfast topped with some poached eggs or even as a lunchtime meal.
Recipe:
2 zucchini, grated
1/2 cup bacon diced
2 spring onions, sliced finely
2 cloves garlic, crushed
2 eggs
4 tbsp almond flour
Salt and pepper
Fresh parsley, chopped
3 tbsp butter

How To Make Zucchini And Bacon Fritters :
- Mix all ingredients, except butter, in a mixing bowl until well combined.
- Melt a tbsp of butter in a frying pan over medium heat. Scoop out 1/4 cup of mixture and place into frying pan and slightly flatten. Repeat until there’s no more room in your pan (make sure you leave room in between each fritter to allow you to flip them easily) 
- Cook for 5mins on one side or until golden and fritter is partly cooked through. Flip fritter over and continue to cook for another 5mins. Remove from pan when cooked. Repeat with remaining mixture.
Enjoy either hot or cold served with your favourite salad, vegetables or even on their own
