Simple Toast Bread Recipe

It is a very basic one, low in sugar and butter and no milk. Crispy crust and soft crumb, you will never get tired of eating it. This one I used instant yeast
Ingredients:
- High gluton bread flour 250 g
- Skimmed milk powder 10 g 
- Instant yeast 2 g
- Sugar 17.5 g
- Salt 4.5 g
- Water 175 g
- Unsalted butter 15 g


Process : 
- Combine everything except butter, knead the dough until it becomes more and more smooth, add butter, knead until fully developed. 
- Shape into roll, bulk fermentation around 80~90 minutes. (One folding in between, normally after the first 60 minutes) 
- Divide the dough to 2 or 3 equal parts, shape them to balls and let them rest for 20 minutes. 
- Final shaping: flatten the balls using a rolling pin, expel the gases accumulated in the dough throughly but carefully. Roll up and pinch the ends to seal. Put them into the mold one by one. Cover the mold by cling film to prevent the dough from drying out. 
- Proofing, normally 60 minutes at 35°C. 70~80% full.
- Brush egg wash or just spray some water mist. Bake in a preheated oven at 200°C for around 25~28 minute.
