Raspberries Coconut Balls Recipe

Ingredients :
1 cup coconut butter
2 tbsp sugar free maple syrup
2 tbsp coconut oil
250g fresh raspberries
1/2 tsp vanilla essence
1 tbsp powdered Erythritol, optional
40g 85% dark chocolate


How To Make Raspberries Coconut Balls Recipe :
1. Place all ingredients (except chocolate) into a food processor and blitz until well combined. Adjust sweetness to taste. (If mixture is too soft, pop into fridge for 10-15 minutes to firm slightly)
2. Scoop out tbsp size balls of mixture and roll into even balls. Place on a tray lined with baking paper. Repeat until all mixture has been used. Place tray in fridge while melting chocolate.
3. Place chocolate into a microwave safe container and melt in 30sec bursts until completely melted.
4. Remove coconut balls from fridge and drizzle the chocolate over top of balls. Return to fridge to set for at least 2 hours. Store in an airtight container in the fridge.
