Spaghetti And Meat Balls Recipe

1kg beef mince
3 slices salami, finely diced
1 spring onion, finely sliced
6 Kalamata olives, pitted and finely diced
1 tbsp fresh basil, finely diced
1 tbsp fresh oregano, finely diced
Salt and pepper
1 tbsp garlic infused olive oil
1 1/2 cups beef stock
1 cup tomato purée
1/2 cup baby spinach leaves, finely sliced
10 kalamata olives, pitted and halved
6 cherry tomatoes, sliced
1 spring onion sliced
2 tbsp fresh basil, diced
1 spring fresh thyme
Salt and pepper to taste

How To Make Spaghetti And Meat Balls :
1. Mix all meatball ingredients (except olive oil) together in a mixing bowl until well combined. Using a tbsp scoop out some meatball mixture and roll into balls. Set aside and repeat with remaining mix until all mixture has been used.
2. Heat olive oil in a large frying pan or skillet. When hot add all meatballs and seal the outside. Add all sauce ingredients to pan and bring to the boil.
3. Reduce heat and allow to simmer, stirring gently every few minutes, for 10 minutes or until sauce has reduced and thicken and meatballs are cooked through.
4. Serve with your favourite low carb pasta and top with crumbed feta cheese.
