Creamy Chicken No Noodle Soup
It was time to make dinner and there wasn’t a lot in the fridge so I gathered what I had and came up with this incredible tasting creamy chicken soup.
Definitely a good one as we are slowly coming into winter and great to make ahead of time and freeze for those days when you just can’t be bothered cooking.

Recipe :
3 tbsp butter
1/2 brown onion, thinly sliced
1 garlic clove, crushed
1/2 zucchini, diced
6 button mushrooms, sliced
1 cup green cabbage, shredded
1/4 cup spinach, sliced
1 cup chicken broth
1 cup pouring cream
1/2 rotisserie chicken, shredded
Salt and pepper

Method :
• Heat a large pot and melt butter. Add sliced onion, garlic, zucchini, sliced mushrooms and sauté until softened.
• Add cabbage and spinach and continue to sauté until wilted. Add the chicken broth and cream, bring to the boil.
• Reduce heat and simmer, add chicken and seasoning to taste. You may need to add a little more broth or water if you’d prefer it to have more liquid. Check seasoning and continue to simmer until vegetables are cooked through.
• Top with fresh parsley and cracked pepper.
