Cinnamon Rolls Recipe

For the dough :
350 g strong flour/ all purpose flour
55 g caster sugar
1 tsp salt
10 g active dry yeast
120 ml lukewarm water
60 ml lukewarm milk
40 g melted butter
1 room temperature egg

For the filling :
70 g softened butter
1.5 tbsp cinnamon powder
2 tsp cocoa powder
65 g icing sugar

For the glaze :
120 g icing sugar
30 ml milk
1 tsp vanilla extract

How To Make Cinnamon Rolls :
1. Dissolve the yeast into the water and milk and let sit until it foams up.
2. Sift the flour, sugar and salt together.  Add in the melted butter and the yeast mixture. Combine with a wooden spatula.
3. Whisk in the egg and stir until well combined and the dough releases from the sides.
4. Empty the contents onto work surface and knead. Place the dough into a deep bowl and cover with tea towel. Rest in a warm area for at least 30 mins.
5.Once double in volume, roll out the dough into a 12x18" sheet.  Mix together the ingredients for filling and spread onto the sheet. Roll up and cut into pieces. Place the rolls on a baking tin and rest until doubles in volume.
Bake in preheated oven at 175C for 25 mins.
6. Mix the ingredients for the Glaze and pour over the hot rolls.
Serving temperature : Warm

Pro tip :
1. Instead of using ready made cinnamon powder, grind two cinnamon sticks into a coarse powder. Trust me, the flavour difference is massive.
2. If the dough feels sticky, dust a tiny bit of flour and knead. It might be quite tempting to keep adding flour but avoid this at all cost and don't overwork your dough.
3. You can add lemon zest into the glaze for additional flavour.
