Chicken Spinach and Parmesan Cheese Sausage Rolls

Pastry:
2 1/2 cups mozzarella cheese, shredded
1 1/4 cups almond flour
1 egg
1 tsp baking powder
1/4 tsp garlic powder
1/4 tsp onion powder
Salt and pepper

Chicken filling:
500g chicken mince
1 tbsp almond flour
1/4 cup baby spinach leaves, chopped
1/4 cup Parmesan cheese, grated
1/4 tsp onion powder
Salt and pepper

Egg wash:
1 egg, whisked

Method:
*Preheat oven to 170C
(Pastry)
1. Melt cheese in microwave until completely melted. Add this and all other pastry ingredients into a food processor and blitz until a smooth ball is formed. Remove and set aside.
(Chicken filling)
2. Place all filling ingredients into a bowl and mix until well combined. Fill a piping bag with filling mixture. Set aside.
(To assemble)
3. Divide pastry in half, roll one portion in between 2 sheets of baking paper in a thin rectangular layer approx 3-5mm thickness. Remove top layer of baking paper.
4. Pipe filling mixture along the long side of pastry into a long sausage shape. Roll up pastry to enclose filling, finishing seam side down. Cut off excess pastry.
5. Repeat with remaining filling and pastry.
6.Brush top of pastry with whisked egg. Cut each long sausage shape into 6 short pieces. Place pieces, seam side down on prepared tray, 2cm apart. Sprinkle sesame seeds over the top.
7. Bake for 15-20 minutes or until golden and cooked through.
**Serve with tomato ketchup or bbq sauce
