Chicken And Vegetable Satay Stir Fry Recipe

Ingredients:
2 large chicken breasts sliced thin
1 tbsp garlic infused olive oil
1/2 red capsicum, sliced
8 button mushrooms, halved
1/4 cabbage, shredded
1 red chilli, sliced
2 spring onions, sliced
3 radishes, sliced
1 cup baby spinach leaves
1 cup bean sprouts
1 large zucchini, sliced thin
400ml coconut cream
1/4 cup peanut butter
2 tsp ground cummin
Salt and pepper to taste.

Method:
1. Heat large pan with olive oil, sauté chicken until cooked through. Remove and set aside.
2. In the same pan sauté all prepared vegetables (except bean sprouts and baby spinach leaves). Sauté until cooked through. Remove and set aside.
3. In a separate bowl whisk together coconut cream, seasoning, peanut butter and cummin.
4. Heat coconut mixture in the same frying pan and bring to a gentle boil, simmer until reduced and thicken.
5. Add cooked ingredients to sauce and toss until well combine. Season to taste.
6. Stir through bean sprouts and baby spinach leaves.
7. Serve with a sprinkle of fresh chilli, sliced spring onion and sesame seeds.
