Beetroot Hummus Sandwich Recipe

Ingredients :
400 g can chickpeas​
250 g cooked beetroot​
4 Tbsp lemon juice​
2 garlic cloves​
1 Tbsp tahini​
1 tsp ground cumin​
1 tsp ground coriander​ 3/4 tsp salt​
30 g walnuts​
10 mint leaves​

Sandwich Filling :
2 slices of Hovis Wholemeal bread​
¼ carrot​
½ avocado​
2 slices of red pepper​
small handful of watercress​
small handful of micro-green sprouts​ 

How To Make Beetroot Hummus Sandwich :
1. Put all the ingredients of the beetroot hummus in a food processor & blend until smooth.​
2. Spread hummus on 1 slice of Hovis Wholemeal bread. Add finely cut carrot (you can use a julienne cutter if easier), followed by sliced avocado, red pepper, watercress and micro-green sprouts. Top with another slice of bread. Enjoy!
