Beetroot Hummus Sandwich Recipe
Ingredients :
400 g can chickpeas
250 g cooked beetroot
4 Tbsp lemon juice
2 garlic cloves
1 Tbsp tahini
1 tsp ground cumin
1 tsp ground coriander 3/4 tsp salt
30 g walnuts
10 mint leaves
Sandwich Filling :
2 slices of Hovis Wholemeal bread
¼ carrot
½ avocado
2 slices of red pepper
small handful of watercress
small handful of micro-green sprouts
How To Make Beetroot Hummus Sandwich :
1. Put all the ingredients of the beetroot hummus in a food processor & blend until smooth.
2. Spread hummus on 1 slice of Hovis Wholemeal bread. Add finely cut carrot (you can use a julienne cutter if easier), followed by sliced avocado, red pepper, watercress and micro-green sprouts. Top with another slice of bread. Enjoy!
