Bacon Wrapped Chicken Breast Stuffed With Ham

Recipe:
1 chicken breast
1 slice ham
1/4 cup baby spinach leaves
1/2 tbsp tomato purée
1 tsp grated Parmesan cheese
2 strips of streaky bacon

Method :
- Preheat oven 180C
- Using a meat mallet flatten the chicken breast, spread the tomato purée over the top of the chicken breast. Layer the ham, spinach and Parmesan cheese.
- Starting from one end roll chicken up into a log shape.
- Lay the bacon strips side by side and place chicken on top and wrap chicken in bacon. Place on a baking tray and into oven for 15-20mins or until cooked through.
- Serve with favourite vegetables or a salad.
