Light And Fluffy Hot Milk Cake

Ingredients:
4 eggs
2 cups castor sugar
2 and 1/4 cup all purpose flour
2 and 1/4 tsp baking powder
1 tsp vanilla extract
1 and 1/4 cup milk
10 Tbsp unsalted butter
A little confectioners sugar for dusting.


Method:
Preheat your oven to 180C. Lightly butter and dust a 9” by 13” baking pan. In the bowl of a stand mixer add the eggs attach the whisk attachment and whisk on medium to high speed for 5 minutes till nice and thick. 
Slowly pour in the sugar while the machine is on. The mixture will become light fluffy. Sift the flour and baking powder in a separate bowl. 
Then gradually add it to the egg mixture along with the vanilla, on a slow speed, scraping down the sides as you do it. In a separate pot add the milk and butter and heat it just till the butter melts, stirring often. Slowly in a steady steam pour the hot milk into the egg mixture. 
Make sure you do not have any lumps. Pour this batter into your prepared baking pan. Pop it into your oven for 40-60 minutes or till a toothpick comes out clean. 
Remove and cool completely. Then dust lightly with confectioners sugar, cut into squares and serve
