Chef Burger Recipe

Ingredients:
- Two half pound patties
made from whatever ground meat you have on hand.
- burger seasoning (we used Meat Church Holy Cow, I also like to use Uncle Chris steak seasoning)
- 1 large jalapeño
- 8 oz cream cheese (OR 1 container of Philadelphia jalapeño cream cheese for an easier option)
- 5-6 pieces of bacon
- 1 red onion
- 2 tablespoons dark brown sugar
- 1 tablespoon red wine vinegar
- pinch of salt
- 1/4 cup mayo (Hellman’s, obviously)
- 2 teaspoons sriracha sauce
- dash of garlic powder
- dash of soy sauce


Directions :
Season the patties however you see fit. John grilled them on a charcoal grill over the fire for 5 minutes on each side. Then moved them to the side of the grill off the fire for about 10 minutes. We used our grass fed beef so the patties were very lean. Cooking time may differ for different meat to fat ratios.


For the jalapeño cream cheese:
Simply mince a large jalapeño and mix it with 8 oz cream cheese. You can also buy a premixed jalapeño cream cheese.


Bacon and red onion jam:
This stuff is my JAM. Fry the bacon in a skillet and set the bacon aside. Drain some of the grease and caramelize the red onion in the remaining grease. Once onion is cooked down, chop the bacon and add it to the pan with the red wine vinegar, dark brown sugar, and salt.


Sriracha mayo:
Mix the mayo and sriracha. Add a dash of garlic powder and a dash of soy sauce.
Assemble the beast, and devour.
