Black Forest Cake

INGREDIENTS:
⠀For biscuit:
- Flour - 250 gr.
- Almond flour - 60 gr.
- Eggs - 3 pcs.
- Sahar - 250 gr.
- Kefir 3.2% - 200 gr.
- Vegetable oil - 150 gr.
- Butter - 50 gr.
- Cacao - 80 gr.
- Baking powder - 5 gr.
- Salt - 1/2 tsp
- Soda - 1.5 tsp

For cherry sauce:
- Cherry frozen - 300 gr.
- Sahar - 60 gr.
- Water - 80 gr.
- Water (for starch) - 50 gr.
- Corn starch - 15 gr.
- Cognac - 1 tablespoon

For cream:
- Cottage cheese - 500 gr.
- Cream 33% - 250 gr.
- Sugar powder - 110 gr.
- Cognac - 1 tablespoon

For cream (coating):
- Cottage cheese - 700 gr.
- Cream - 100 gr.
- Sugar powder - 130 gr.

PREPARATION:

1) Beat eggs with salt until foam appears, add sugar. Beat until lush white mass (about 5-7 minutes).

2) Sieve the remaining dry ingredients through a sieve and mix in a separate bowl.

3) Add kefir, vegetable and butter at room temperature to the lush egg mass.

4) Pour dry ingredients, beat for another 1-2 minutes.

5) Pour into two forms (18-20 cm.) And put in the oven at 160-170 degrees for 40 minutes before a dry toothpick.

6) Cook the cherry sauce. Bring cherries with sugar and water in a stewpan to 40-50 degrees and pour water with starch, without stopping interfering. Bring to a boil, introduce cognac and boil for 1-2 minutes. .

7) Prepare the cream. Beat all ingredients in a mixer bowl for no more than 3 minutes.

8) Assembling the cake. Cut the biscuits into 2 cakes each. Putting it in the ring. Cream cake side cake + sauce + close cream cake. And so we repeat 2 more times. Cover with the last cake, cover with foil and put in the refrigerator for 4-5 hours.

9) Prepare a cream for coating. We make this cream by analogy with the cream for the filling. We cover the cake. Decorate at will.
