Banana Chocolate Chip Muffins
Ingredients : 
2 Bananas
3/4 cup + 2 tbsp Almond Milk
1 tsp Apple Cider Vinegar
1/4 cup Maple Syrup
1 tsp Vanilla Extract
1/4 cup Coconut Oil (melted) 
2 cups Spelt Flour
5 tbsp Coconut Sugar
2 tsp Baking Powder
1 1/2 tsp Cinnamon
1/2 tsp Salt
1/2 tsp Baking Soda
1 Package of Chocolate Chips

Directions :
- Preheat oven 350°F & line a muffin tin.
Melt coconut oil & set aside. Mash bananas, then add to a bowl with the remaining wet ingredients (not coconut oil).
- In a large bowl mix dry ingredients.
Once cooled, mix coconut oil into the wet mixture then pour the wet ingredients into the dry ingredients & stir (be careful not to overmix).
- Fold in chocolate chips then fill muffin papers 3/4 full. Bake at 350°F for 25 mins. Let to cool in pan for 5 to 8 mins then transfer muffins to a cooling rack & cool for another 15 mins.
