Neapolitan Waffles Recipe

This recipe makes 3 cups of each frosting taste. If that's more than you need to make your waffles from Neapolitan, you can store leftover ice to dip store-bought burnt items like brownies or donuts. The idea is to make a Neapolitan Icing taste, then dip it into your heart.

These icings will start to stiffen as they sit. They will be good for 1/2 hour after you mix it. If you want to make it first and use it later, put it in a bowl and place a paper towel directly on the surface. And then cover the bowl with plastic wrap and leave it at room temperature. If necessary, stir 1-2 extra Tbsp. hot water to regain the right consistency.

Fluffy Buttermilk Waffles
Strawberry Icing
4 cups (about 16 oz.) powdered sugar
 1/4 cup seedless strawberry jam
3 tablespoons meringue powder
1 teaspoon vanilla extract or vanilla bean paste
6-7 tablespoons of hot water, plus more to heat the spatula
Chocolate Icing
4 cups (about 16 oz.) powdered sugar
1/4 cup unsweetened cocoa
3 tablespoons meringue powder
1 teaspoon vanilla extract or vanilla bean paste
9-10 tablespoons of hot water, plus more to heat the spatula

How to Make It
Step 1
To prepare waffles, cook according to recipe instructions; Set aside.

Step 2
To prepare strawberry icing, place jam, powdered sugar, meringue powder, and vanilla in a mixer bowl. With the mixer running at medium speed, add 6 tablespoons of water gradually. Beat until evenly mixed, about 3 minutes, stop to scrape the sides as needed. If necessary, add up to 1 tablespoon more water, and shake until the desired consistency is achieved. Put aside.

Step 3
To prepare chocolate icing, place the powdered sugar, unsweetened cocoa, meringue powder, and vanilla in a heavy duty mixer bowl. With the mixer running at medium speed, add 9 tablespoons of water gradually. Beat until evenly mixed, about 3 minutes, stop to scrape the sides as needed. If necessary, add up to 1 tablespoon more water, and shake until the desired consistency is achieved.

Step 4
To install, place the offset spatula in hot water for 3 to 5 seconds. Dip the right edge of 1 waffle (about 1/3 waffle) into the brown icing, and the smooth edge using a warm offset spatula; clean the spatula. Dip the left edge of the waffle (about 1/3 of the waffle) into strawberry freezing and the smooth edge with offset spatula; then clean the spatula. Transfer to wire wrap. Repeat the procedure with the remaining snacks. Let stand at room temperature until the icing is set, about 30 minutes.
