Coconut-Curry Beef

This slow-cooker beef dish inspired by Thailand is sure to be a family favorite. Serve coconut beef with jasmine rice, topped with fresh chopped coriander.

Ingredients
2 tablespoons vegetable oil
2 pounds of roast beef, cut into 2 inches
Salt
2 large onions, each cut into 8 wedges
4 cloves garlic, finely chopped
2 tablespoons finely chopped fresh ginger
1 12-oz. can light coconut milk
2 tablespoons packed light brown sugar 
1 tablespoon curry powder
1 teaspoon cayenne
1 pint cherry tomatoes

How to Make It
Step 1
In a large skillet, warm the oil over medium-high heat. Sprinkle beef with salt and chocolate on all sides, in batches if necessary, for a total of about 8 minutes. Transfer to a slow cooker with onions, garlic and ginger.
Step 2
Beat coconut milk, brown sugar, curry powder and cayenne pepper and pour over the meat. Cover and cook low until the meat is tender, 4 to 5 hours. Stir the cherry tomatoes and leave them warm and soft in the stew for 15 minutes. Adjust seasonings and serve.
